I thought since I frequently include some of our family’s own recipes in our weekly menu plan that I would start including the some of these recipes on the blog – partly so I have somewhere where I know I can find the recipe when I forget how to make something. So here’s the first one, a chilli recipe essentially invented by my daughter.
Casper’s Chilli
Ingredients:
500g beef mince
2 tins tomatoes
2 tins corn kernels
2 tins kidney beans
2 tsp cajun seasoning (or to taste)
2 tbs rice (or as needed to thicken)
Method:
Put all the ingredients into a saucepan and simmer until cooked. Serve in bowls with tortilla chips or corn chips on the side.
Serves about five depending on appetites, freezes well.
