Today I’ve been baking, and my husband’s been stressing about our car. My car developed a water leak last week and today it went to our mechanic to be fixed. Unfortunately our mechanic is someone my husband knows through his work so he has been communicating directly with my husband. Also unfortunately my husband suffers from depression so the mechanic says, “I don’t know what’s wrong with it yet” and he hears “It’s going to need a new engine” and then rings me up and worries about it. I’m trying to stay positive and hand it all over to God but it is hard when someone keeps ringing you up and worrying at you. Just for the record it could need a new engine but it also could just need some fairly minor repairs. The bigger problem is that I need my car next week to take my mother to appointments and to take my friend from Tasmania touring around Victoria. Thankfully we have emergency roadside assistance which will provide us with a hire car until mine is fixed, or for a week whichever is shorter.
First up, I’ve been baking biscuits for everyone to have for afternoon tea for the next week. I’m sure everyone knows how to make 120 for less than $5, actually since I’m in Australia and I cook gluten free there’s no way I get 120 biscuits for even $5 but I still get 120 biscuits for way less than I would have to pay at the supermarket so it’s still all good. If you don’t know how to make 120 biscuits for less than $5 look here for the recipe I prefer. I’m currently baking some chocolate chip muffins using a basic tea cake recipe with added choc chips. I’m also baking the meatloaf we’re having for tea tonight, thus saving probably a couple of cents by not having to use the oven just to bake our dinner. After dinner I’ll be whipping up a couple of grab and go breakfast options for my husband who will often not bother to eat breakfast if I don’t make it easy for him. I’ll be using some recipes from “The Breakfast Revolution: Recipes From Outside the Cereal Box“. I love this book and it’s making it easier to get my husband to work with breakfast sorted. I just package up some grab and go ideas and put them out with his morning tablets and not worry.
