OK, so this isn’t actually the menu plan for this week because I won’t be cooking at home this week, it was last weeks though.
Chicken stir fry using whatever I have and some honey and soy sauce. I stir the rice through the stir fry at the end to prevent people just picking the stir fry off the top and leaving the rice. Also I like it better that way.

Meatloaf based on Jamie Oliver’s Cracking Good Burger in his “Ministry of Food” cookbook.
Hamburgers, ditto.
Spaghetti and Meatballs, ditto.
I mixed up a triple batch of the burger mix, substituting rice crackers and mixed herbs because I need them to be Gluten Free and I didn’t have any fresh parsley. Then I divided the mixture up and froze the burgers and meatballs on a biscuit tray, then transferred them into freezer bags. For the meatloaf I line the tin with a freezer bag just laid flat through the tin and push the mixture into the tin on top of the bag then put it in the freezer, when frozen I just turn the bag inside out around the meatloaf and put the tin away until I want to cook it.
