Today’s recipe comes to you courtesy of my brother who gave me this recipe years ago. Unfortunately my husband hates anything with a white sauce base so I haven’t really been able to make it unless I make something else for him. Now, of course, I can make what I like for me and the kids. So without further ado
Peter’s Tuna Casserole
Ingredients:
- 30 g Butter
- 3 tablespoons Plain Flour (I use Rice Flour)
- 1/2 cup grated cheese (I go heavy)
- 2 cups milk
- 2 tsp lemon juice (can leave out but it’s nicer with)
- 425g Can of Tuna (cheap store brand is best)
- 4 Large Potatoes
- Salt & Pepper to taste
Method:
Melt butter, stir in flour and cook for 1-2 minutes. Remove from heat and stir in milk and cheese. Bring to the boil, stirring constantly. Add lemon juice, drained tuna, salt and pepper. Pour into a buttered shallow heat proof dish. Boil potatoes, mash as normal, add salt and pepper to taste. Spread over tuna mix and bake in a preheated oven at 180 degrees C for 15-20 minutes until golden brown.
